There’s a great asian market near my office, so I stocked up on a bunch of tofu last week. I stumbled upon this recipe recently, and decided to give it a go… Tofu isn’t usually “my thing”. I eat it, but it never really excites me. That, plus the sheer numbers of some things in this recipe gave me a bit of pause.. 12 shallots? 4 TABLESPPOONS of pepper?! Madness! No. Not madness. As it turns out, it’s genius. This is far and away the best tofu dish I have ever had in my life. The pepper makes it very spicy, in a good way – the shallots are amazing, and the tofu winds up perfectly crispy and flavorfull. Damn.
Being a guy who’s quite fond of asian food, I did happen to have the three different soy sauces on hand. The recipe itself is very simple if you have them, it’s just very time comsuming. Slicing that many shallots takes forever, and frying up 800 grams of tofu one little batch at a time takes eons too. Next time, I’ll use a food processor for the shallots, and maybe use the deep fryer for the tofu. If I can cut the times for those down, it’s actually a really easy recipe that would be no problem to make on a weeknight. I wound up forgetting the green onions for the photo – I tossed ‘em in later. Whoops. And for some reason I was out of Jasmine rice. I threw some sushi rice in the steamer and it worked great. I’m really looking forward to the next time I make this.
